It's May Food Swap Day. Which meant that I went to the store at 9:30 p.m. (yes, that's right) and started cooking at 10:15 p.m.--8 meals, 1 to keep, 7 to swap, for our monthly food-swap. But it's always worth it. It always feels like Christmas. And I really only cook once a month now. For reals.
Today I came home with:
oven-baked risotto with chicken & spinach
baked rigatoni & crusty bread
let the feasting begin...
